【新北餐厅】食养山房 - 和室用餐环境│TaiwanDay

空间料理皆艺术
来到汐止近郊的「食养山房」,随着浓厚的东方人文氛围,如置身山水画中,脚步很自然就慢了下来。食养山房的设计是顺势而为,让老房子和周围环境彰显原始美感,料理也像艺术品般赏心悦目,细腻却不让人感到拘谨,舍弃华丽的装潢,让空间单纯到极致,建筑也运用大量的「留白」,还诸绿树与天地,生活哲学却尽在其中。

老板林炳辉曾经是建筑绘图师, 43岁时动念归隐山林,全心向大自然学习,因而创造出一家「感受到安静」的养身餐厅。每天开工都从和员工泡茶讲解禅学、分享美感体验开始,也唯有安顿好自己的心境,才能提供从容安闲的服务。用餐空间处处可见禅意,沉稳朴质的矮凳、石墙、纸灯笼、榻榻米、墙上的水墨画、池塘里的野鸭与荷花和宽敞落地窗,每个隔间都保持静定的调性,环绕着古琴乐声,感受得到店主人让来客「与空间对话」的深意。

荤食套餐

山泉手工花生豆腐:软嫩绵密的手工花生豆腐,佐以杏仁片和清香的腌渍番茄,搭配清甜玉米浆,前菜还有一碗昆布、白萝卜熬煮的香浓蔬菜汤,对味又开胃。

烟熏鲑鱼卷:晶透饱满的新鲜鲑鱼卵入口即化,和春卷皮包覆的烟熏鲑鱼一起食用,再搭配新鲜木耳和茄子,淋上义大利洋葱油醋酱,咸香平衡的绝妙滋味。

青蔬刺身冷盘:花艺般的摆盘让人赞叹,鲜海胆配银芽豆皮卷,生鱼片包裹紫菜,吃进嘴里另有一番惊喜,大块蔬菜可蘸洋葱油醋酱,风味绝佳。

煎红虾+麻糬乌鱼子:红虾对剖煎至香酥适中,淋上层次多变的红酱,弹性十足的虾肉搭配清甜南瓜,麻糬包乌鱼子微煎,外脆内软,山林与海洋的滋味交叠在其中。

干贝甜豆拌饭:米饭 Q软香甜,干贝的鲜香味充分融入其中,看似小巧精致,却相当有饱足感,搭配原味杏鲍菇,让人不得不佩服主厨的创意。

莲花鸡汤:这道招牌汤品,吸引许多饕客慕名而来。完整的干莲花上桌才置入汤中,热气让花瓣逐渐开展,熬煮一日的汤头,再加入莲子、莲藕、百合、百果、山药、柳松菇与土鸡等焖炖,甘醇鲜美,让人一碗接一碗。

黑糖桂圆芋泥:甜点也别有用心,内藏的绿豆仁让芋泥层次更丰富,撒上薏仁和花生粉提味,搭配甜而不腻的黑糖桂圆汁,为这套山海飨宴画下完美句点。

Artistic designs and cuisine
Travelers tend to slow down as they wonder into the suburbs of Xizhi, where rich Eastern culture is handsomely presented. It feels like walking into a painting. The concept of designing Shi-yang Cultural Restaurant is easygoing and complying with nature. The building sits harmoniously with its surroundings, highlighting the natural beauty. Cuisine offered at the restaurant bears the charismatic charm as artworks do. The designs are exquisite but still relaxing. There is no extravagant furnishing, keeping the space simple. The art of leaving blank is applied on the construction of the building itself, maintaining the green and nature. The conception of philosophy lies within the designs.

Lotus chicken soup
This dish is chefa��s specialty. Many visitors came for this. A full dried lotus is put into the soup, the heat then opens up the petals. The soup is simmered with lotus seeds, lotus roots, lilies, ginkgos, Chinese yam, mushrooms and chicken. The taste is refined and delicate

Cold-smoked salmon wrap
Large and glittering salmon roe served with cold-smoked salmon wrap. On the side is fresh fungus and eggplant drained with Italian balsamic vinegar. The flavor is balanced and savory.

Sashimi with vegetable
The beautiful presentation is breathtaking. Food itself is full of surprises: fresh sea urchin with vegetable wrap and sashimi served with seaweed. There is balsamic vinegar to go with vegetables, which tastes perfect!

Pan-fried Red Shrimp + Karasumi with Hakka rice cake
Red Shrimp pan-fried till crispy, drained with red sauce. Chewy shrimp meat matches sweet pumpkin. Karasumi wrapped in Hakka rice cake (Mochi), pan-fried until ita��s crispy on the outside and tender in the inside. The combination of seafood and land-food offers a complex and interesting taste.
