不用到北投也吃得到酒家菜!进驻天母近30年的「金蓬莱遵古台菜餐厅」,由第三代老板陈博璿接手后,承袭祖父陈良枝创立「蓬莱食堂」的古早味,不仅发挥从前任职航空公司的管理行销能力,将老店面装潢得典雅堂皇,本身就是老饕的他,对料理更有一番透彻研究。

把做菜当艺术

陈博璿依长期掌厨的经验,形容每道菜都是艺术,「不能只是做个样子,还要有灵魂,味道比摆盘重要多了。 」厨房里五花八门的传统调味料,就像他的调色盘,曾有来应征的厨师,因习惯速成品而打退堂鼓,也因为这样的坚持,「招牌菜的味道一定不会跑掉」。过去只有政商名流上北投应酬,才能在氤氲温泉旁品尝到的宴席菜,如今许多家庭一吃三代,年节更少不了一瓮金蓬莱的佛跳墙,问陈博璿凡事亲力亲为不累吗?他淡淡一笑说:「辛苦但是很快乐」。

坚持料理品质

谈起小时候父亲骑摩托车载他送菜到北投的大街小巷,陈博璿不胜怀念,他说是他最快乐的记忆。沿途日式建筑旁的绿树也深印脑海。金蓬莱迁到天母东路后,除了用餐空间更宽敞,二楼就有一大片改建中的绿色庭园,每间包厢的大面玻璃窗纳入自然光,实木桌椅和字画彰显古意,设计也融入陈老板到各地旅游的观察。即使已打响传统台菜名号,成为许多观光客离台仍怀念不已的滋味,陈老板考量开分店的条件,仍在于「让料理品质百分百稳定」。店里有多位资深服务生,如邻家阿姨般亲切,看客人点菜时一道接一道,不忘提醒可能超出份量,实在「揪甘心」。

推荐菜色

蓬莱排骨酥(150元∕1份2支):传承40年,每桌必点的超人气排骨酥,选择上好的肉质部位,以酱油、糖、胡椒腌一天,裹粉须恰到好处,再经两道油炸工序,陈老板强调火候是金黄酥香的关键。享用时不妨直接拎骨就口,皮脆肉甘润的滋味,尝来着实不凡。

土魠鱼米粉锅(950元):陈老板因一次在外品尝白鲳米粉汤不甚满意的经验,回来研发出料丰味美的土魠鱼米粉锅,加入厚实甜嫩的土魠鱼、芋头、鱿鱼、细米粉等食材,运用大量的蛋酥使汤头更鲜美,吃起来弹牙又顺口。

佛跳墙(880元):从祖父传承下来的佛跳墙,至今摆上桌依然让宴席主人面子十足。从挑栗子、活水发鱼皮、炸排骨酥、蒸芋头等,陈老板都坚持古法做工,逐项细心处理,鸡汤为底甘醇不腻,逢年过节预订手脚要快。

乌鱼子炒饭(380元):乌鱼子炒饭须兼顾每口都融入咸香颗粒,开大火拌炒至米饭透出金黄色泽,另一方面,切丁的乌鱼子要软滑而有嚼劲,最后铺排于炒饭上头,吃巧又能吃饱。

Makes Cooking Like Art

You can enjoy a fine banqueting style meal just in Tianmu without even going to Beitou! Jin Peng Lai Traditional Taiwanese Cuisine Restaurant located in Tianmu has already run its business for about 30 years. And now, the restaurant has passed down to the third generation to Bo-Xuan Chen, which was established by his grandfather, Liang-Qi Chen, and originally calleda�?Peng Lai Si Tanga�? .

After inheriting the restaurant, Bo Xuan not only made full use of his abilities on managing and marketing from his previous work experience in an airline company but also renovated the old style interior design into a restaurant with an elegant sense of atmosphere. As a foodie, he also dedicates himself to study cooking in order to have a thorough understanding of it.

According to Bo Xuana��s cooking experience, he says every dish is art that you cannot cook it absentmindedly. You must cook it with enthusiasm and make it with soul. Most importantly, flavor of the dish is way more significant than its superficial decorations. In his kitchen, you can see various traditional seasonings, which are just like his color palette for him to create an exact and unique taste of every dish itself. However, some cooks coming for applying the job here were literally scared off because of this. They couldna��t adapt to the traditional cooking style that you have to make things from scratch and season every dish pinch by pinch.
