CEO, Tsai Chin-Chuang, also known as Master Tsai, has been in the food and beverage industry for nearly 40 years. He followed his father on catering tours since he was a child. At the age of 17, he began his career in the food and beverage industry and, at the age of 44, he started his own restaurant, the Full Yuan Seafood Restaurant. Since then, 19 years has passed. Under his warm smiles and masculine look hides intricate skills. In 1999, he was named one of the Top 10 Chefs in Taiwan at the First National Chefs Awards.
Glamourous Combination of Gourmet and Art
Full Yuan was replicated in 2007 for expansion. The new Full Yuan International Creative Delicious Food took home in a venue of nearly 5,000 m 2 with raised ceiling, million-dollar lighting and audio system and a banquet hall for 186 tables. An art gallery cuts through the venue. Master Tsai combines culinary art with visual art, bringing his guests feasts to not only the tastebuds, but also the heart. It is now the largest restaurant on the West Coast of Taiwan.
Raw Oyster: Finely selected oysters freshly delivered from Dongshi, Chiayi. Oysters are especially large and delicious during the season from May to July. Dip it in the exclusive sauce created by the chef; the refreshing taste will show you what a�?taste of oceana�? means.
Pumpkin Milk Custard: This is a very complicated gourmet dish. Finely selected fresh pumpkin is cut in half and a�� of the flesh is taken out. Poke small holes on the a�� of flesh left in the pumpkin skin and steam to fully cooked. The cooked pumpkin is then filled with the exclusive milk custard, set aside to cool and solidify and cut into slices before serving. The strong aroma of pumpkin meets the creamy texture of milk custard to create dual layers of sensations that burst into perfectly harmonized waltz in your mouth.
Pork Grilled with Miso: Top-class Taiwan pork flavored with miso based sauce is grilled for 20 minutes and cut into 0.3 cm slices. Served with a bed of salad, the refreshing taste makes it perfect for summer.
Salmon Salad: Top-class fresh salmon imported from Norway and Canada are cut into sumptuous and juicy slices and served with onion shreds and Japanese-style salad dressing. The sweet and sour taste bursts into a unique combination of fresh seafood taste.
